Food Runner

Before

  • Cleanliness Check

During

  • 15 min bathroom Checks (Toilet Paper, Floors, Paper towels, Soap, Mirror)

  • When table stands wipe and sanitize (in this order):

    • Table

    • Seat

    • Sweep Floor

  • Stock Napkins, straws, lids, utensils

  • Stock side stands

  • Checking on tables

    • Asking if they can clear any plates or trash

    • Asking for refills

End of Shift (in order):

  • Restock condiments, sauce, napkins, utensils

  • Wipe down counters, tables, and seats

  • Wipe down expo line, shelves, etc

  • Bring dishes back to dishwasher and replace basket

  • Wipe down cart

  • Wipe down baby chairs

  • Sweep all customer dining area (be sure to move seats, tables, and cart)

  • Sweep bathroom area

  • Empty and replace trash cans in dining area

  • Empty and replace trash cans in bathrooms

  • Notify Shift Lead before leaving to confirm area inspection

End of Day

  • Place parmesan cheese in fridge

  • Raise chairs (NOT before 10;30pm)

  • Roll rugs

  • Sweep

  • Mop dining area and bathroom

    • If you have designated food runner, full shift, they mop. If not - Dishwasher

Cashier

Before

  • Cleanliness Check

During

  • Wiping down counter and work area

  • Organize customer side

End of Shift (in order):

  • Wipe down POS system

  • Wipe down outside of pizza guard glass

  • Wipe down bathroom mirrors

  • Wipe down both sides of glass doors

End of Day

Shift Lead

Before

  • Count Cash

  • Confirm sufficient change and bills for shift

  • Check Catering Orders

    • Make sure kitchen is aware

    • Confirm driver if delivery

  • Confirm staff attendance and in uniform

  • Alcohol stocked and ready for shift

  • Confirm

  • Confirm any parties or reservations on calendar

  • Check work of food runner and cashier

  • Text and check in with GM of location

During

End of Shift (in order):

  • Count Cash

  • Drop cash in designated area

End of Day
